I saw this dip on Pinterest a month or so ago and knew it looked like something we'd love. It's basically taco-seasoning-flavored refried beans mixed with cheeses and sour cream used as a dip with tortilla chips. Yum! But I had some pork sausage I needed to use up, so I added a handful of things. I don't think I'd do anything differently next time as it was delicious!
Texas Trash
2 cans refried beans
1 pound of ground pork sausage browned with one diced onion
1 block of softened cream cheese (we used fat-free)
1 cup of sour cream (again, fat-free)
1 can of diced tomatoes, drained
1 small can of diced green chilis
2 tablespoons taco seasoning
shredded monterrey jack cheese
Preheat the oven to 350 degrees. Spray a 9x13 with non-stick spray, and spread the two cans of beans in the bottom of the pan. In a large bowl, mix together the pork, cream cheese, sour cream, diced tomatoes, green chilis, and taco seasoning. Spread this mixture over the beans. Cover the top with shredded cheese, and bake, uncovered, 30 minutes or until cheese is melted and the filling is bubbling around the edges.
We think it's best served with whole wheat Tostitos Scoops. Enjoy!
